Jerk chicken recipe

Nice and spicy, just the way I like it! This recipe is for the oven, but BBQ is even better. Serves 4-6.

INGREDIENTS

  • 1 tbsp allspice berries
  • 1 tbsp black peppercorns
  • 1/2 tsp cinnamon
  • 1/2 tsp ground nutmeg
  • 1 tbsp fresh thyme leaves
  • 4 spring onions, chopped (use the white part and most of the green)
  • 3 scotch bonnet chillies (or adujama)
  • 1 tbsp brown sugar
  • 1 tsp salt
  • 2 tbsp dark soy sauce
  • Juice of 1 lime
  • 4 to 6 chicken legs

INSTRUCTIONS

  1. Cut the chicken legs into thighs and drumsticks (leaving the skin on)
  2. Blend the marinade and coat the chicken
  3. Leave in the fridge for 6 hours or overnight
  4. When ready to cook, pre-heat the oven to 220 degrees C.
  5. Bake for 25 minutes
  6. Switch the grill/broiler and char for 10 mins
  7. Serve with rice and peas
