These chicken breasts are stuffed with bacon, cheese and jalapenos for maximum flavour bomb potential. Trying serving them with this whole roasted cauliflower. Recipe serves 2 people.

Ingredients:

  • 2 chicken breasts
  • 6 rasher of bacon
  • 1 tablespoon pickled jalapenos (from a jar)
  • 2 tablespoons cream cheese
  • 50 grams cheese (e.g. cheddar, gouda)
  • Rub of choice

Method:

  1. Pre-heat oven to 200 degrees C
  2. Hollow out the chicken breasts with a knife so you can stuff them.
  3. Grate cheese, finely chop jalapenos and mix both with the cream cheese in a small bowl
  4. Stuff the cheese mixture inside the chicken breasts
  5. Wrap with bacon and secure with a cocktail stick or skewer
  6. Lightly coat with a rub of your choice
  7. Bake for 15-20 mins

Jalapeno popper chicken bacon bombs – in which I used whole jalapenos instead of slices!
