VIDEO: Back2Back Challenge at Baut Zuidas

On 6th March 2016, popular temporary restaurant Baut (formerly located in Het Parool’s ex-headquarters and now re-located to the Zuidas) held a so-called “Back2Back Challenge”. Playing off the musical challenge in which two DJs take over the turntables, each mixing the other’s track into their next number, Baut’s event used the same premise but with two chefs. Baut’s owner and head chef Michiel van der Eerde took on TV chef and writer Ramon Beuk, with the idea being that they would battle it out over six courses – alternating chefs for each round. While Ramon served up a Surinamese take on Baut’s menu, Michiel was challenged to use Ramon’s Surinamese ingredients in his signature modern Dutch cuisine.

This isn’t a review (because I can’t review a restaurant off the back of a one-off event, and especially an event that I didn’t pay to attend!) – so instead I’ve put together a short video of the evening. Highlights included a sumptuously spicy and fruity oyster to start, and a flaky cod number (playing off the Surinamese bakkeljauw) with a delicately creamy jus and tomato hollandaise.
