Recipe: scallion-ginger sauce

Serve this makes-everything-better Asian fusion sauce with boiled chicken, rice or noodles.

  • 2-3 spring onions, finely sliced
  • Thumb-sized piece of ginger, peeled and grated
  • 1 tsp Sichuan peppercorns, lightly crushed
  • 1 tsp chilli flakes
  • 1 tsp Korean red pepper flakes
  • 3 tbsp vegetable oil
  • 1 tsp sesame oil
  • Half tsp sesame seeds (optional)

Put all the ingredients except the oils in a heatproof bowl. Heat the oils in a small saucepan until they’re very hot and just smoking. Carefully pour our the other ingredients. Stir to combine and leave the flavours to get to know each other.
